the nem philosophy
Nem features contemporary Vietnamese cooking elevated with a global creative mindset and made with the freshest local ingredients. This season one of our favorite bounties is Clark Farm’s happy pigs fed with ripe walnuts and squash from the farm grounds.
Unlike traditional models where the diner simply gets served, to experience Nem’s euphoric identity is to meet and spend time with Vinh Le. The soul behind Nem, Vinh is the wild combination between urban designer, food designer, and co-owner of Ha Noi’s semi-underground Monsoon kitchen and bar. Vinh cut his teeth as a cook at Ming Tsai’s Blue Dragon and has been hosting cooking classes the past six years.
At the end of the day, Nem is simply an excuse to have fun cooking our hearts out and dining merrily alongside wonderful company.
